Salmon, asparagus, and baby potatoes on one sheet pan. Done in 25 minutes start to finish.
Ingredients:
- 4 salmon fillets (6 oz each)
- 1 lb baby potatoes, halved
- 1 bunch asparagus, trimmed
- 2 lemons (1 sliced, 1 juiced)
- 3 tbsp olive oil
- garlic, dill, salt, pepper
Steps:
1. Heat oven 425.
2. Toss potatoes with oil + salt; roast 15 min.
3. Add salmon + asparagus, top with lemon slices.
4. Roast 12 more min.
